Banana cheesecake

Fruity and light, this is a delicious way to end a meal.

SERVES 12 PREP 20 MINS COOK 1 HR

200g oatcakes (no added sugar), finely crushed 1tbsp cocoa 1tbsp fine powdered stevia sweetener 100g butter, melted.

For the filling:

3 small ripe bananas Juice 1 lemon 560g full-fat cream cheese 300ml double cream 4 free-range eggs ½tsp sugar-free vanilla extract 2tbsp cornflour 4tbsp powdered stevia sweetener.

For the topping:

150-170ml double cream Few drops sugar-free vanilla extract Cocoa, for dusting.

You will need:

20cm spring-form cake tin, lined with baking paper.

1. Set the oven to 140C Fan. Combine the oatcakes, cocoa and sweetener in a bowl then stir in the butter. Tip the mixture into the base of the lined cake tin and press down firmly in an even layer. Bake for 10 mins, then remove it from the oven.

2. To make the filling, mash the bananas with the lemon juice. In a separate bowl, beat the cream cheese to soften, then beat in the cream, eggs, vanilla extract, cornflour, sweetener and the mashed banana mixture. Pour this over the base.

3. Put the tin on a baking tray in the centre of the oven for 50-60 mins, or until the filling has just set but still has a slight wobble.
