Ham & Cheese Egg Bake
Unlike egg bakes that require an overnight in the fridge, this can be cooked after just a 5-minute rest.
Ingredients
• Oil, for dish
• 4 large eggs
• 1/2 cups whole milk 1 Tbsp. Dijon mustard
• 1/8 tsp. freshly grated or ground nutmeg Kosher salt and pepper
• 12 ounces sourdough bread, cut into 2-inch pieces
• 1 small red onion, cut into 1/4-inch-thick wedges
• 1 Gala apple, cored and thinly sliced
• 4 ounces sliced ham, torn into 2-inch pieces -3 ounces Cheddar cheese, grated (about 1 cup)
1. Heat oven to 350°F. Oil a 21/2-to 3-quart baking dish. In a large bowl, whisk together eggs, milk, mustard, nutmeg, and 1/4 tsp. each salt and pepper. Add bread and let sit, tossing occasionally, 5 minutes.
2. Fold onion, apple, ham, and cheese into bread mixture. Transfer mixture to prepared baking dish and bake until set and knife inserted into center comes out clean (cover with foil if it browns too quickly), 45 to 50 minutes.
Serves 8. About 270 cal, 10.5 g fat (4.5 g sat), 14 g pro, 650 mg sodium, 29 g carb, 2 g fiber
