METHOD

1 To make the marinade, combine the sake and mirin in a small saucepan and bring to a boil over medium-high heat. Let the mixture boil for a minute or so, until the harsh alcohol smell burns off. Turn the heat down to low and add the miso paste and sugar. Gently whisk until miso is incorporated and sugar has dissolved. Remove from the heat and let cool to room temperature before continuing.

Pat fish dry and place in a glass baking dish or zip-top bag. Cover fish with marinade and refrigerate for 24 hours.
