How we made it healthier

Sail through sick season with rosemary. Not only does this hearty herb add fresh and earthy flavor to our turkey breast, it can also help ward off colds. Credit goes to compounds that stimulate white blood cells to attack invading germs.

Herb-Stuffed Turkey Breast 

ACTIVE TIME: 20 min. TOTAL TIME: 1/2 hrs. SERVES: 8

Fill and roll our centerpiece earlier in the day so all that's left to do is roast

Place turkey, skin side down, in single layer on surface. Remove tenderloins, cover with plastic wrap. Pound to 1⁄2" thick. Cover breast with wrap; pound to 3⁄4" thick. Remove wrap. Place 4 (12") pieces kitchen string 2" apart under breast. Arrange tenderloins over breast to fill in; sprinkle with 1⁄4 tsp. salt and 1⁄4 tsp. pepper. In bowl, mix remaining ingredients. Spread over turkey within 1" of edge. Starting with long side, roll up. Tie with strings. Wrap; chill until transporting to destination.

2 When arriving at destination, heat oven to 400°F. Let turkey stand at room temp. Sprinkle with 1⁄4 tsp. salt. Place in roasting pan. Cook until meat thermometer inserted in center registers 170°F, 50–55 min. Let rest 10 min.
