Siri’s mac and cheese with 52% less fat 

For a lighter take on mac and cheese, Today’s Siri Daly subs in cauliflower for some of the cheese. To make: Puree 12 oz. of steamed cauliflower, 11⁄2 cups of milk and 1⁄2 tsp. of salt. In skillet, melt 4 Tbs. of butter over medium heat. Whisk in 3 Tbs. of flour and 1 cup of milk until thick. Fold in 8 cups of cooked pasta, cauliflower mix and 21⁄2 cups of shredded cheddar; transfer to baking dish. Bake at 350°F until bubbly, 45 minutes.
