Simple, scrumptious and seriously speedy – pasta dishes on the table in 20 minutes

CHICKEN SUPERFOOD PASTA WITH AVOCADO PESTO
SERVES 4
PREP 10 MINS COOK 10 MINS

INGREDIANTS:

1 In a large saucepan of boiling salted water, cook pasta following packet directions. Drain. Return to pan. Keep warm.

2 Meanwhile, in a large frying pan, heat oil on high. Cook chicken 1 min each side until lightly browned and cooked through. Season.

3 AVOCADO PESTO In a small food processor, combine all ingredients and process until smooth. Add a little water to thin if required. Season.

4 Toss chicken, baby kale mixture, peppers and onion through cooked pasta to combine. Spoon into serving bowls, scatter extra walnuts over and dollop with pesto mixture to serve.

BROCCOLINI, GOAT’S CHEESE & SAUSAGE ORECCHIETTE

PREP 5 MINS COOK 15 MINS

INGREDIANTS:

1 In a saucepan of boiling salted water, cook pasta following packet directions. Add broccolini for fi nal 30 secs of cooking time.

2 Meanwhile, heat oil in a frying pan on high. Squeeze teaspoon-sized chunks of sausage mince from casings into pan. Cook 5-6 mins, stirring occasionally, until golden and cooked through. Mix in chilli, remove from heat.
