Maddie and Ben took over the Cotley Inn 20 months ago and have completely transformed it with its shabby chic cum country inn vibe. Creating a menu with flair, they and their chefs source most of their ingredients from the surrounding area. Fruit, vegetables and herbs are grown in the pub grounds, lamb and beef come from the surrounding estate and the couple are about to get some more pigs for pork. Villagers even bring in their surplus grown goods in exchange for beer they tell me!
