CAJUN CHICKEN WITH LIME HOLLANDAISE
PREP + COOK TIME 25 MINUTES SERVES 4
Rub 2 tablespoons cajun seasoning over 650g chicken tenderloins. Cook chicken on a heated oiled grill plate (or grill or barbecue), in batches, until cooked through. Meanwhile, to make lime hollandaise, blend or process 2 tablespoons lime juice and 2 egg yolks until combined. With motor operating, gradually add 200g hot melted butter in a thin, steady stream, processing until smooth and thick. Season to taste.
Serve with 125g rocket.
