MERRY MARSHMALLOWS

21/4 cups caster sugar

3/4 cup cold water, plus extra

21/2 Tbsp powdered gelatine

2 tsp vanilla extract Cornflour, to dust
STEP 1 Line a 22cm square pan with baking paper, extending paper 2cm above sides for handles.
STEP 2 In the large bowl of an electric stand mixer, combine sugar and cold water. Beat on low for 2 minutes. Meanwhile, in a small jug combine gelatine and extra cold water. Microwave for 30 seconds, until gelatine has dissolved and mixture is very hot. Beat hot gelatine mixture gradually into sugar mixture until combined, then add vanilla and beat on high for 2 minutes, until thick and white and bowl has cooled.
STEP 3 Working quickly, pour mixture into pan. Set aside at room temperature for 5 hours, or until firm. Cut into squares with a hot sharp knife and toss marshmallows in cornflour. Serve or store in a cool, dry place for up to 1 week.
