APEROL SPRITZ CHEESECAKE

Combine your favourite pre- and post-dinner treats – an aperitif and dessert – for a tizzy take on trifle with a boozy jelly and glitzy gold garnish. Recipe on page 14

MARGARITA ICE-CREAM DREAM

Sweet and zesty, the liquor is in the easy DIY ice-cream, which is teamed with a frozen lime granita. PS, the glass rims are dipped in minty sugar.

MANGO DAIQUIRI DESSERT

Layer sponge fingers, creamy custard and fresh mango, all drizzled with a daiquiri sauce, then top with spun toffee nests for a tropical cocktail treat.

250g butternut snap biscuits 2 sheets edible gold leaf (from the

cake decorating section of large supermarkets), to decorate

Dehydrated orange slices, to serve

CHEESECAKE FILLING

250g cream cheese, at room temperature

1/3 cup pure icing sugar, sifted

2 tsp vanilla extract

100g melted white chocolate, cooled

300ml tub thickened cream, whipped into soft peaks

APEROL JELLY

2 cups prosecco

1/2 cup caster sugar

11/2 Tbsp powdered gelatine

1/2 cup Aperol
