Summer has arrived, and while the heat may not be everyone's cup of tea, there are a number of ways to feel refreshed. Smoothies and salads are a crowd favourite to beat the heat. Not only do they pack in the best nutrition for you, but they also leave you feeling refreshed to take on a hot summer's day. Here are some delectable recipes that are a total breeze to whip up, and more importantly, your tot can relish them too!

WATERMELON STRAWBERRY CAPRESE SALAD

YOU NEED

• 3-4 cups of watermelon cubes

• 2 cups strawberries, chopped

• 1/2 up feta cheese

• 2 tablespoons cold pressed virgin coconut oil

• 1/4 cup freshly chopped basil

• Kosher salt and freshly ground black pepper

YOU MUST

• In a large bowl, combine the watermelon, strawberries, feta and cold pressed virgin coconut oil.

• Toss the salad and season with salt and pepper as per taste.

• Garnish with basil and serve.
