If you have a packet of tortillas in the pantry, you can whip up a quick and tasty meal whenever you want. Here are some ideas.

Mince enchiladas

Cooking time 1 hour

You need

• 2 tablespoons olive oil

• 1kgmince

• 1 red onion, chopped

• 1 clove of garlic, chopped

• 1 sachet (50g) tomato paste

• 2 tins (410g each) red kidney beans, drained

• 30g Old El Paso spicemix (or your favouriteMexican spicemix)

• 8medium-sized tortillas

• 1 cup gratedmozzarella

For the sauce

• 3 tablespoons butter

• 3 tablespoon flour

• 1 cup hotmilk

• 1 cup hot chicken stock

• 1 cup sour cream
