MERINGUE AND RASPBERRY RIPPLE SEMIFREDDO
At less than 100 calls per serving, this is a no-guilt and all-pleasure pudding.
SERVES 6
- 500ml tub frozen vanilla yogurt
- 150g (5oz) raspberries
- zest of ½ lemon
- 8 mini meringues, broken into pieces You will need:
- 900g (2lb) loaf tin lined with cling film
1..Place the loaf tin in the freezer. Remove the frozen yogurt from the freezer and allow to soften for a few mins.
2. Place the raspberries in a small bowl with the lemon zest and crush lightly using the back of a fork.
3. Use a wooden spoon to mix the meringue nests into the softened yogurt, then fold in the crushed raspberries. Scrape into the prepared tin and cover with cling film. Return to the freezer for at least 2 hrs, until firm enough to slice, or until required.
