Fabulous FROZEN FRUIT

MIXED BERRY CRUMBLE

PER SERVING 543 calories, 25g fat, 11g sat fat, 70g carbs

This is lovely hot from the oven and delicious cold the next day too!

SERVES 6

For the fruit:

• 1kg (2¼lb) mixed frozen berries, such as raspberries, blueberries and blackberries

• 4tbsp demerara sugar

• 1tbsp cornflour

• Grated zest and juice of 1 lemon

• 2 star anise

• 5cm (2in) piece cinnamon stick

For the topping:

• 125g (4oz) selfraising flour

• 125g (4oz) butter, softened

• 100g (3½oz) demerara sugar

• 100g (3½oz) porridge oats

For the maple pecans:

• 45g (1½oz) pecan nuts

• 2-3tbsp maple syrup

• Greek yogurt, to serve

You will also need:

• A large ovenproof dish and a baking tray lined with baking parchment

1. Heat the oven to 180C/ Gas 4.Tip the fruit into the ovenproof dish and sprinkle over the sugar, cornflour and lemon zest, then stir gently to mix. Spoon over the lemon juice, then add the star anise and cinnamon stick.

2. For the crumble topping, tip the flour into a bowl and rub in the butter. Stir in the sugar and oats. Mix until it starts to clump together, then scatter it over the fruits.
