This summer, chef René Redezpi and Travel + Leisure contributor Matt Goulding released their Apple TV+ docuseries, Omnivore. Each episode follows a single ingredient on its global journey, from harvesting to processing to cooking. T+L spoke to the Danish chef about the making of the series, and what's on his travel radar.

How did Omnivore come to be?
It's been over a decade in the making. We had been working on something in a similar vein, telling the stories of who we are through some select ingredients, such as coffee and corn. And then during COVID, so many decisions were madefor Noma and for myself. And one of them was: Now it's really time for us.
