SERVES 4 (MAKES 8 PANCAKES)
INGREDIENTS
For the pancakes
- 135g plain flour
- 1 tsp baking powder
- 1/2 tsp salt
- 2 tbsp caster sugar
- 120ml milk
- 1 large egg, lightly beaten
- 2 tbsp melted butter, plus extra for cooking
For the strawberry topping
- 400g strawberries, cut into bite-sized pieces (reserve a couple to garnish)
- 1 tbsp caster sugar
- 1 tsp vanilla essence
To serve
- 8 tbsp crème fraiche
- 2 tbsp honey
Fluffy pancakes with strawberries and crème fraiche
1. Start with the strawberry topping. Add the strawberries to a pan, with the sugar, vanilla essence, and 1 tbsp of water. Heat until the sugar has dissolved and the strawberries begin to release their juices.
2. Remove from the heat and allow to stand while you make the pancakes.
3. To make the pancakes, sift the flour, baking powder, salt, and caster sugar into a large mixing bowl.
4. In a separate bowl, lightly whisk together the milk and egg and then whisk in the melted butter.
