Simple. Nutritious. Versatile. Let's Hear It For The Egg!

Fast fact #2

Eggs, especially organic cage-free eggs, are full of goodness like vitamins and minerals including biotin and choline. Biotin turns what you eat into energy, while choline moves cholesterol through your bloodstream.

ITALIAN BAKED EGGS

• 2 pork sausages, casings removed

• ½ cup baby spinach leaves, washed

• 4 tomato slices

• ¼ cup pouring cream

• 1½t tomato paste

• 1T flour

• ¼t dried oregano

• ¼t salt

• 4 eggs

• butter or olive oil for greasing

1 Preheat oven to 180°C. Grease 4 ramekin or individual ovenproof dishes. Layer the dishes with sausage meat, spinach leaves, and tomato, dividing the ingredients evenly between the dishes.

2 In a small bowl, whisk together the cream, tomato paste, flour, oregano, and salt. Divide the sauce evenly between the dishes, drizzling it over the meat, spinach and tomato.

3 Place the dishes on a baking sheet and bake for 15 minutes. Remove from oven and increase the temperature to 200°C.

4 Crack an egg into each dish, and return to the oven for about 10 minutes until set.

Did you know?

Pregnant women shouldn’t eat cured meats, because they could contain the bacteria listeria monocytogenes, but cooking the bacon puts it on the safe list. If you prefer not to eat bacon, you can easily leave it out and make this an EAT sandwich!
