Grand Hyatt Singapore previously embarked on a six-month search to explore Singapore’s best local flavours with the aim of serving it at StraitsKitchen. “But we soon realised that the authenticity was impossible to replicate, which is why we decided to hire local veteran hawkers to helm StraitsKitchen,” says Martin Satow, Grand Hyatt Singapore’s Executive Sous Chef.
