For Vasushree Baid, Desi Firangi is more than a dream. The restaurant, her brainchild, is a popular haunt among college-goers and residents in Manipal. Be it the quirky ambience or the authentic chaats, the restaurant has swiftly created a name for itself in the serene township. Baid, however, was not satisfied with just one outlet; she wanted a pan India presence.

“I figured that I was missing a lot of skills and scaling up meant that I needed to have knowledge about operations, marketing, finance, everything,” she says. “In the food and beverages business, inventory management is very important, so is targeting the right audience. Without sound knowledge in these areas, scaling up would have been difficult.”
