JEWISH ITALIAN CHICKEN NOODLE SOUP 

Serves 4

1. In a 4-qt. saucepan, bring the chicken stock to a bare simmer. Season with salt — it can be slightly oversalted. Add next 5 ingredients and return to a simmer. Cover; cook until veggies are just soft, about 20 min. Remove from heat and keep covered.
