Modern Mac displays can go super-bright, but only when HDR content is involved.
Fortunately, you can get 1,000 nits of brightness whenever you want by using an app called Vivid.
Vivid uses your Mac display's HDR capabilities to push its brightness beyond its normal bounds. This is great for when you need to use a MacBook outside in bright sunshine, or if you want a better movie-watching experience, even if the content is not in HDR. It works using your standard brightness keys - except they go twice as bright. It also comes with extra features like customisable shortcuts and a setting that shuts off Vivid if your battery is low.
Modern Macs only
Vivid only works on modern Macs with HDR support, such as the M1, M2 and M3 series MacBook Pro (except the M1 13-inch model) and the Pro Display XDR monitor. You can pair other Apple silicon Macs with a Pro Display XDR and Vivid will work (Apple says the Pro Display XDR can run at 1,000 nits indefinitely, so it's safe to use), but it's not compatible with any Intel Mac or the Studio Display.
