Cherry Coconut Hedgehog Slice

MAKES 24 SQUARES

PREP & COOK 20 MINS

  • 125g unsalted butter, chopped
  • 1/2 cup caster sugar
  • 1 tsp vanilla extract
  • 2 tblsps cocoa powder
  • 1 egg, lightly beaten
  • 250g packet Marie biscuits, roughly chopped
  • 100g packet red glace cherries, chopped
  • 2/3 cup desiccated coconut

1 Grease an 18cm x 28cm rectangular slice pan. Line base and sides with baking paper, extending paper 2cm above pan edges.

2 Place butter, sugar, vanilla and cocoa in a medium saucepan. Stir over a medium to low heat until butter is melted. Remove. Cool for 5 minutes.

3 Whisk in egg. Return saucepan to a low heat. Cook, whisking constantly, until mixture is thick and glossy. Transfer to a bowl.

4 Add biscuits, cherries and 1/2 cup of the coconut. Stir until well combined. Press mixture firmly into prepared pan. Sprinkle with remaining coconut. Refrigerate for about 4 hours, or until firm.

5 Lift slice out of pan. Cut into squares.

TIP This slice can be made up to one week ahead. Store in an airtight container in the fridge. Any plain sweet biscuits can be used.
