Tell us about this unique photographic journey...
“What makes a great restaurant? Is it the food, the service, the architecture or the ambience? I believe it’s a mix of all these elements, plus something less tangible, a sense of connection to the people who live in the area and the community they’ve developed. You’ve got to mix with the locals, it’s a great way to feel included and be accepted.
Community is a word I like to use frequently in my projects and this is especially the case when developing the menu for my restaurant in Mumbai. I want people to feel a sense of place, something that doesn’t feel generic and offers a real slice of the area. In my quest to accomplish this, I went in search of the most local flavours, and I found this inspiration in the streets of Mumbai.”
What’s been some of the highlights from this journey?
“I love exploring the local spots in India. It is always a sensory overload and Mumbai is no exception. I chose Mumbai to open my second restaurant, The Wine Rack, and it is here that I can showcase the dishes that were inspired from my travels around this amazing city that I have come to love. The highlight for me is the sheer diversity in locations, from iconic landmarks like the Gateway, Dhobi Ghat and Crawford Market to the local streets of South Mumbai with old British architecture and the vibrancy of all that is India.”
