Turn excess veggies into delicious sweet treats, says Toby

SINCE starting my BBC Radio Devon Sunday morning show three months ago I’ve learnt two important lessons: don’t mutter or guffaw when the news is being read as everyone hears, and be careful when talking about cake.

A few weeks ago I reflectively asked whether cakes could be made with vegetables other than the regulation carrots and courgettes and since then I’ve received a steady stream of recipes from keen-cook listeners.

While on paper the red velvet chocolate and rhubarb crumble cake all sound lovely, the samples I’ve been given by colleagues have left a lot to be desired.
