Masaharu Morimoto may be at the forefront of giving a modern face to Japanese food, but confesses he hates fusion cuisine.
Masaharu Morimoto is a man who has been-there-done-that, and who intends to carry on doing that for as long as it takes. Every day of his life is a challenge; he wouldn’t have it any other way. He’d rather be in a fish market than a karaoke bar or a pub. His energy and enthusiasm for what’s coming next belies his claim to becoming old. It’s not about the Michelin stars; it’s about the challenge and the flavours. What Rocky Balboa was to boxing, Masaharu Morimoto is to cooking; Famous for his Morimoto restaurants in Philadelphia and New York and of course, the Wasabi restaurants in Delhi and Mumbai. But for rest of the world, especially in his home country Japan, he is ‘The Iron Chef’, from his famous cookery show on TV.
On his career choice: I grew up in Hiroshima, Japan. Since I was very little I had three dreams; to be a professional baseball player, to graduate high school, and to be a sushi chef. An injury to my shoulder put an end to the first, I seriously tried to achieve the second and then, I just decided to be a sushi chef. I wanted to master the art. So I followed my dream.
