FOR THE PERFECT JACKET POTATO
Prick the skin all over and bake at 200C/180C fan/gas 6 for 1-1/2 hrs, depending on the size, until the skin is crisp and a skewer slides in easily. Or, wrap in kitchen paper and microwave on high for 5 mins, then pop in the oven for 15 mins at the above temperature
1 LIGHT TUNA MAYO
Finely chop 1 spring onion and stir into 2 tbsp low-fat mayonnaise. Add a small tin drained tuna and a good spoonful of canned sweetcorn. Season and mix well.
2 INSTANT FISH PIE
Scoop out the insides of a jacket potato and mash with 50g flaked hot-smoked haddock, 3 tbsp milk and 1 sli spring onion. Season, pile back into the skins and bake for a further 10 mins.
