The weekend is the perfect time to bake this rich nutty loaf to enjoy in the coming week. You can freeze it for another day, maybe when you're having guests over. It's also perfect to freeze in slices and defrost when you want a small pick-me-up.
SERVES 8 PREP 20 mins plus 20 mins soaking and cooling COOK 1 hr 10 mins EASY V
125g unsalted butter, cubed and softened, plus extra for the tin
200g soft dates, pitted and roughly chopped
2 tsp bicarbonate of soda
150g light muscovado sugar
