Spicy Indian stir-fried prawns

SERVES 1 PREP 10 mins

COOK 20 mins EASY

1 large egg

1 tbsp rapeseed oil

3 spring onions, sliced into 3cm pieces

80g frozen spinach, defrosted

1/2 tbsp medium curry powder

7 cherry tomatoes, halved

80g frozen peas

60g raw king prawns

2 tbsp chopped coriander 1/2 small red chilli, sliced

1 Bring a pan of water to the boil and cook the egg for 7 mins. Remove, then put in a bowl of cold water to cool. Set aside.

2 Heat the oil in a medium nonstick frying pan. Add the spring onions and fry over a medium heat for 5 mins until softened. Stir through the spinach, curry powder, tomatoes and peas, and cook for 5 mins.

3 Turn up the heat, then add the prawns and cook for 2 mins. Stir in the coriander. Gently peel the shell offthe egg and slice in half, then place on top of the prawns and scatter over the chilli to serve.
