Classic Lemon Meringue Pie

- 1/3 cups all-purpose flour
- 1/2 tsp. salt
- 1/2 cup shortening
- 1 to 3 Tbsp. cold water
- FILLING
- 11/4 cups sugar
- 1/4 cup cornstarch
- 3 Tbsp. all-purpose flour
- 1/4 tsp. salt
- 1/2 cups water
- 3 large egg yolks, lightly beaten
- 2 Tbsp. butter
- 11/2 tsp. grated lemon zest
- 1/3 cup fresh lemon juice
