100g strawberries, hulled and diced grated zest and

10ml (2 tsp) juice of

1 lemon

100g almond flour

20g desiccated coconut

5ml (1 tsp) baking powder

2.5ml (½ tsp) salt

FOR THE ICING

100g mascarpone

100g cream cheese

30ml (2 tbsp) erythritol grated zest of 1 lemon
