With Vanilla & Coconut Rice Pudding
The aroma of a fresh quince is sweet, delicate and almost citrusy — and it’s definitely unique. Peeling releases their fragrant, almost-fl oral scent, and spiced cooked quinces will fill your home with the nicest aroma! Pairing quince with coconut vanilla rice pudding makes this dessert something special. If you’ve never cooked quinces before, give it a go. It’s easy and I reckon you’ll fall in love with them, too!

INGREDIENTS
Spicy Poached Quince
1 cup coconut sugar, plus 1⁄2 cup extra
1 tbsp vanilla bean paste
1 tbsp whole cloves
1 tbsp whole cardamom pods
2 cinnamon sticks
2–3 bay leaves
1 lemon, peel only (store lemon in fridge to use later)
1L filtered water
