What to do
1 Preheat the oven to 180C and line a baking tray with baking paper.
2 Dissolve 110g brown sugar in a pan with 150g butter and 125ml golden syrup.
3 Once cool, whisk in an egg then combine with 450g plain flour, 1tbsp ground ginger, ½ tsp cinnamon, ½ tsp nutmeg and ¼ tsp ground cloves.
4 Knead on a lightly floured surface until smooth. Divide into quarters and roll each to 3mm thick.
5 Cut into festive shapes of various sizes, place on the lined tray and bake for 10 minutes or until light golden.
6 Make a royal icing following packet directions and place in a piping bag.
7 Once the biscuits are cool, pipe a design to decorate and allow to set.
8 Fill a clean jar with caster sugar, a sprig of rosemary and then nestle shapes in before screwing on the lid.
