VIETNAMESE SUMMER ROLL

INGREDIENTS

• 2 thin paper rice sheet

• 40gms lettuce

• 30gms Chinese cabbage

• 20gms carrot

• 20gms cucumber

• 10gms green onion

• 15gms cilantro and mint

FOR SWEET & SOUR SAUCE:

• 5gms fresh red chilli

• 2ml soya sauce

• 50gms jaggery

• 20ml lemon juice

• 10gms garlic, chopped

• 5gms coriander, chopped

METHOD

• Cut all the vegetables in a shredded style. Keep it on a side.

• For sauce, melt jaggery in a bowl keeping hot water underneath. Once it gets melted, add chopped garlic, fresh red chilli, chopped coriander and soya sauce. Let it cool and add lemon juice.

• Take a fresh bowl and shredded vegetable with sauce and mix it well.

• Take warm water and put rice paper sheets into it to get them moist. Remove them quickly by holding the sheets and not leaving them in water.

• Take the sheet on a surface and put the mixture on it. Wrap it nicely and relish!

INGREDIENTS

• 80gms cheese

• 20gms fresh basil

• 10gms garlic

• 10ml Extra virgin olive oil

• 10gms fresh oregano

• 100gms wild mushroom ragu

• 400 gms fresh mozzarella

• 1 gold leaf

• 50gms 00 flour

• 10gms salt

• 10gms yeast

• 10ml oil

• 100ml water

• 10gms charcoal powder

• 10ml white truffle oil

• 1kg pilate tomato

• 100gms onion

• 10gms garlic

• 10gms salt

• 10gms pepper

• 10gms sugar

• 10ms basil
