Just like lemons, limes come from the citrus fruit family, but both differ very much in terms of flavour profiles – and are versatile whether in savoury dishes, desserts, beverages, or cocktails. An interesting fact about these green orbs is that they don’t ripen offthe tree – they have to be picked and stored when they’re close to maturity. To choose the best, follow these tips:
• Scratch the skin gently with your nail and sniffit – it should emit a strong and zesty scent. Those that are not ripe will be lacking in the smell department.
• Aim for those that are fully green, rather than those with a yellowish tinge.
• The limes should feel firm but give a little when you squeeze them. Those that remain rigid are not ripe yet.
02 THE TYPES OF LIME
PERSIAN
When people refer to limes – this is often the variety they’re talking about. They are generally larger, less aromatic, less acidic and less bitter than other varieties. But if you’re looking to get more juice out of your fruit, it’s your best bet.
KEY
Usually identifiable by its much smaller size, it also has less juice and more seeds. However, its flavour is more intense and has a bitter kick – which explains why it’s popularly used in its namesake pie. Do note that this variety turns yellow when ripe.
