Creamy Pumpkin Basil Soup

The sweetness of healthy pumpkin and the sunset hue of this soup will be a hit with your kid! Coconut milk substitutes dairy cream here.

To serve: Four

You need: 250 gms steamed yellow pumpkin with its skin, seeds and fibre, half cup coconut milk, fresh or dried basil, one cup water, salt and pepper to taste.

You must: Blend the entire steamed pumpkin till smooth. Add water to this and bring to a boil. Put in some of the basil along with the salt, pepper and coconut milk. Turn the flame off within a minute. Garnish with fresh basil leaves and serve hot.

Banana Oat Milkshake

A dairy-free milkshake that’s quick, healthy and unbelievably yummy! Here, we substitute milk with ‘oat milk’ to retain all the nutrients for your child.

To serve: One glass of milkshake

You need: Half cup quick cooking oats, one ripe banana (you could substitute it with any fruit your child likes), two tsp date syrup or four seedless dates, a pinch of cinnamon, three-fourth cup water, a few walnuts (optional).

You must: Blend the oats and water till the oats are fully ground and you get a milky liquid. Add the banana, date syrup/dates and cinnamon and blend till smooth. Pour into a glass and chill before serving. Garnish with chopped walnuts.
