A 'worm' lurks at the bottom of many bottles of mezcal, a type of Mexican spirit distilled from agave plants. This adds colour and flavour, as well as an element of trepidation for drinkers. It's long been known that this is some sort of insect larva - but we didn't know which one.
"Mezcal's alcohol content is relatively high, so the larvae and their DNA are really well preserved," says Akito Kawahara of the Florida Museum of Natural History. As a result, his team was able to identify grubs from 21 mezcal brands. The results, published in PeerJ, reveal that they were all caterpillars of the moth Comadia redtenbacheri.
Just one question remained: what to do with the left-over mezcal? "We held some tasting parties," says Kawahara. "I've become a huge fan."
