LIGHTLY SPICED GREEN PEAS
Heat 1 tbsp butter in a non-stick pan. Add 2 bay leaves and 3 cardamom pods, 1 cinnamon stick, 3 cloves and 1 tsp cumin seeds. Cook for 20 secs then stir in 1½ tsp grated fresh ginger and keep stirring for 30 secs. Add 1 tbsp coriander and 1/4 tsp red chilli powder, salt and a splash of water, then cook for 40 secs more. Stir in 450g frozen peas and sauté for 3-4 mins, or until the peas are cooked and the water has completely evaporated. Take off the heat, then mix in a handful fresh coriander. Serves 4.
CHEESY PEA OMELETTE
Heat 1 tbsp oil in a small frying pan. Fry 2 finely chopped spring onions until softened. Add a large handful of frozen peas and heat through. Beat 2-3 eggs and stir into the pea and onion mix, and cook for a couple of mins until almost set. Finely grate over a little cheddar and fold the omelette in half. Serves 1.
PEA & AVOCADO SALAD
Defrost 300g frozen peas. Drain and dress with 4 tbsp extra virgin olive oil, 2 tbsp white wine vinegar and a handful chopped mint. Set aside the peas to steep, while you peel and chop 2 avocados. Toss everything together along with handfuls of shredded iceberg and rocket. Serves 4.
