10 ways with a can of tomatoes
1 Warming tomato soup
1 TOMATO & BASIL SOUP Cook 1 chopped onion, 1 grated carrot, 1 chopped celery stick and 1 crushed garlic clove in 1 tbsp olive oil until softened. Add 400g can chopped tomatoes and 200ml vegetable stock. Simmer for 15 mins. Whizz in a blender. Stir in 2 tbsp double cream and a handful of chopped basil. Serves 2.
2 WINTER GAZPACHO
Put 2 x 400g cans plum tomatoes, 1 chopped red onion, 1/2 chopped cucumber, 1 chopped red pepper, 1 chopped garlic clove, 200ml vegetable stock, 2 tbsp sherry vinegar in a blender. Whizz until smooth and season well. Chill for 2-3 hrs. Serve chilled, topped with diced cucumber, a halved hard-boiled egg, some sliced red onion, chopped red pepper and croutons. Serves 4.
