What is effortless?
Easy on the eye and simple to make, thanks to shop-bought ingredients and no fiddly techniques. These recipes can be made ahead or require 30 minutes or fewer of prep - they're go-to ideas for entertaining special guests.
This recipe can be used with lots of different fruit flavours -try mango and passion fruit (fresh or frozen) or apple or pear purée. It's also a good way of using up slightly brown bananas. Mash and then fold them into the cream mixture.
10-minute berry creams
SERVES 4 | PREP 5 MINS | COOK 5 MINS | EASY
Tip 300-350g of mixed frozen berries into a pan over a low heat with 2 tbsp of caster sugar and heat until the berries are soft and juicy (add more sugar if you need more sweetness). Tip into a sieve and push the mixture through, leaving the seeds and rough pulp behind. Spoon into four glasses. Mix 8 tbsp of greek yogurt with 6 tbsp of double cream and add this to the berry layer (don’t worry if the berry purée comes up the sides). Sprinkle ½ tbsp of soft light brown sugar onto the top of each and chill until needed. Serve with ginger biscuits.
