Easy beef stew
A cosy winter warmer, low in calories and a cinch to prepare.
SERVES 4 PREP 5 MINS,
COOK 1 HR 30 MINS
450g stewing beef
1 red onion, cut into wedges
2 garlic cloves, sliced
2 sprigs fresh parsley or thyme, plus extra leaves to garnish
300g baby carrots
450ml hot beef stock
2tbsp sun-dried tomato paste 2tbsp balsamic vinegar 2tbsp gravy granules
1 Heat the oven to 160C Fan/Gas 4. Put all the ingredients into a large lidded casserole dish and stir well to combine.
2 Put the lid on and cook in the oven for 1 hr 30 mins until the meat and vegetables are tender. Sprinkle with the rest of the herbs to serve.
Per serving: 240 cals, 6g fat, 3g sat fat, 15g carbs
