Steak with mushroom sauce ———
Prep time: 10 minutes
Cook time: 35-40 minutes
Makes: 2
INGREDIENTS For the steak:
2 x rib-eye, T-bone or club steaks
Salt and milled pepper
2 tsp paprika (smoked or regular)
Glug olive oil
For the pickled onion:
1 /2 cup white vinegar
1/ 4 cup water
2 tbsp sugar
2 red onions, sliced
For the sauce:
1 onion, chopped
2 tbsp butter
1 punnet mixed mushrooms Handful each fresh thyme and sage
1/4 cup white wine (optional)
1 tbsp flour
1 cup cream
1/2 cup sour cream
METHOD:
1. Season steaks well and rub with paprika.
2. Heat oil in a large pan and fry steaks for 4-5 minutes a side. Remove and set aside to rest.
3. Add vinegar, water and sugar to a saucepan and bring to a boil for 2 minutes.
4. Pour hot liquid over sliced onions in a bowl, add a pinch of salt, cover with clingfilm and set aside to pickle for 10 minutes.
5. Make the sauce in the same pan as you fried the steak. Add onion and sauté for 3-5 minutes or until golden.
6. Add butter, mushrooms and herbs, and cook for about 5 minutes.
7. Add the wine and cook for 3-5 minutes or until alcohol has reduced.
8. Whisk in flour until smooth.
9. Pour in cream and simmer gently over a low heat for 4-5 minutes.
10. Stir in sour cream and herbs and season.
11. Serve sliced steak with the mushroom sauce and topped with pickled onion.
