As Copperleaf celebrates its triumphant eighth anniversary this January, we delve into the intricacies of its journey, chronicling the transformative evolution that has propelled it to the forefront of Goa's culinary scene. In 2003, Sachin Pai Bir embarked on a journey into the realm of hospitality, unaware of the monumental success that awaited him in the years to come. As one of the driving forces behind the Copperleaf brand, Sachin's initial foray into the food industry was marked by a lack of prior experience or background in the field.

Reflecting on the early days, Sachin reminisces, "Initially, our hotel solely provided lodging, with food sourced from nearby restaurants. The property, comprising 18 rooms, was in less-than-ideal condition upon acquisition."

Undeterred by the challenges, Sachin and his team embarked on a journey of discovery and transformation. "Entering uncharted territory, we faced a steep learning curve, grappling with maintenance, staffing, and meeting customer expectations," he recalls. Despite the daunting obstacles, Sachin's resolve remained unwavering, and they tackled each hurdle head-on, refusing to succumb to adversity.
