Karanji, also known as Gujiya in some parts of India, is a popular festive sweet made during Ganesh Chaturthi, Diwali, and Holi.

These deep-fried dumplings are filled with a sweetened coconut or semolina mixture, often flavored with cardamom and dried fruits. Crispy on the outside and soft on the inside, Karanji is a delightful treat that adds sweetness to any celebration.

INGREDIENTS

1 cup all-purpose flour (maida)
2 tbsp ghee (clarified butter)
1/2 cup grated coconut (dry or fresh)
1/4 cup powdered sugar
1/4 tsp cardamom powder
2 tbsp chopped almonds and cashews
1 tbsp raisins
1 tbsp poppy seeds (optional)
Oil for deep frying
