The origins of Kunbi cuisine may be traced back to Goa's past, representing a journey marked by colonial influences, agrarian practices, and a stubborn spirit. The Portuguese colonial era had an everlasting effect on the culinary world, introducing new ingredients such as potatoes and tomatoes. However, Kunbi cuisine stood firm, adapting and incorporating these aspects into its traditional recipes, resulting in a uniquely Goan fusion.
