1 SPICED CARROT AND FARRO BOWLS
Preheat oven to 400°. In a large bowl, whisk together 2 tablespoons olive oil, 1 tablespoon honey, 1/2 teaspoon each kosher salt and cumin, 1/4 teaspoon cinnamon, and 1/8 teaspoon cayenne. Add 1/2 pounds slender carrots, peeled and halved lengthwise if large; toss to coat. Spread carrots on a sheet pan lined with parchment paper. Roast until tender and slightly caramelized, 20 to 25 minutes.
Meanwhile, cook 1 cup farro per package directions and prepare sauce: Combine 1/2 cup tahini (sesame seed paste), 1/3 cup lemon juice, 1/4 cup water, 2 teaspoons honey, 1/2 teaspoon kosher salt and 1 small clove garlic, coarsely chopped. Cover and blend until smooth, adding water to reach drizzling consistency if needed.
Divide warm farro and carrots among four bowls; top each with a handful of arugula, plus some chopped fresh mint and roasted pistachios. Drizzle with sauce.
