Beef Pad See Ew

SERVES 4

PREP & COOK 20 MINS

1 Place noodles in a heatproof bowl. Cover with boiling water. Stand for 1 minute. Drain. Rinse under cold water. Drain.

2 Toss beef with 1 tblsp oil, oyster sauce and garlic in a large bowl.

3 To make spicy sauce, combine all ingredients in a small jug. Mix well.

4 Heat a large, non-stick wok over a high heat. Add beef in two batches. Stir-fry for 2 minutes, or until just cooked. Remove.

5 Add gai lan to same hot wok. Stir-fry for 2 minutes. Remove.

6 Heat remaining oil in same hot wok. Add eggs. Cook, without stirring, for 20 seconds. Then stir-fry, breaking up eggs, for a further 20 seconds, or until just cooked.

7 Return beef to wok with noodles, gai lan and spicy sauce. Stir-fry for about 2 minutes. Remove from heat. Stir in basil.
