Mussie Imnetu was found unconscious with a head injury at the Dr Power restaurant in Queensway, West London at 11.30pm on Monday after the huge street party came to an end.
Officers on carnival duty gave first aid before Swedish-born Mr Imnetu was taken to hospital.
A 31-year-old man arrested in Newham, East London on Wednesday on suspicion of attempted murder, remains in custody at a police station.
