Orange-Apple Brined Turkey 

ACTIVE TIME: 45 min. TOTAL TIME: 3/2 hrs. + brining time SERVES: 12

Overnight brining in salty-sweet liquid is the easy secret to this juicy bird that makes the perfect centerpiece for your holiday table

1 Using vegetable peeler, shave rind from orange. Quarter orange; reserve. In 8-qt. non-aluminum container, combine 1 qt. cider, orange rind, brown sugar, salt, 4 sprigs rosemary, pepper and bay leaf. Add turkey and enough cold water to submerge turkey. Cover; chill 15–24 hrs. or overnight.

2 Heat oven to 350°F. Drain turkey; rinse and pat dry. Add onion to roasting pan; place turkey on top. Rub turkey skin with butter; stuff cavity with orange quarters and 2 sprigs rosemary. If desired, truss turkey. Roast, basting occasionally, 21⁄2 hrs., tenting with foil if browning too quickly.
