1 Mackerel With Roasted Rhubarb

Preheat the oven to 200°C. Cut 5 stalks of rhubarb into 15cm lengths and place in a roasting tin with 150ml water. Dust with sugar. Roast for 15min then drain, reserving the juices. Coat 4 mackerel fillets in seasoned flour and place in a hot pan skin-side down. Turn over after 2min, add rhubarb and juices and cook for another minute.

2 Rhubarb Chutney 

Heat a little oil in a frying pan. Add 15 fresh curry leaves and 1/2tsp mustard seeds, frying until they crackle. Finely slice 400g rhubarb, then place in the pan along with 4 chopped green chillies, 1tsp each of cumin and coriander, and 2tbsp sugar. Cook for 3min, then pour in the juice of 1 lime and 3tbsp chopped mint. Cook until the rhubarb is soft, then serve with fish or pork.
