Vegetable & Halloumi Bake
Ingredients (Serves 2)
- 1 red onion, peeled and thickly sliced
- 225g prepared butternut squash, cut into small chunks
- 2tsp olive oil
- 2tsp clear honey
- Juice 1 small lemon
- 2tsp Moroccan seasoning mix
- 1 small red pepper, deseeded and sliced
- 150g Halloumi cheese, cut into chunks
- 50g pomegranate seeds
- 1tbsp freshly chopped mint
1 Put the onion and squash in bowl and mix in the oil, honey, lemon juice and seasoning. Tip straight into the air fryer bowl and cook at 180°C for 10min.
2 Mix in the pepper and continue to cook for a further 15min, stirring occasionally. Mix in the cheese and cook for about 5min until cooked through.
3 To serve, pile on to flat breads or rice and sprinkle with pomegranate seeds and chopped mint.
Pizza Potato Skins
Ingredients (Serves 2)
- 2 x 250g baking potatoes, scrubbed
- 2 tsp olive oil
- Salt and freshly ground black pepper
- 1tbsp sundried tomato paste
- 50g antipasti peppers, drained and chopped
- 30g pitted black olives, sliced
- 1½ tsp dried oregano
- 40g reduced fat grated Cheddar
1 Rub the potatoes with 1tsp oil. Place on the air fryer rack inside the bowl. Cook at 180°C for about 50min, turning over every 15min, until crisp and cooked through. Cool for 10min then slice in half lengthways.
2 Scoop most of the flesh into a bowl leaving a thin layer behind. Cut the skins in half again. Put skins back on the rack, brush with oil, season and bake at 180°C for 10min.
